Made with French sunflower honey, this cuvée has many more typical honey notes, without the high sweetness of traditionally made meads. It is these notes flavors that have made it a consumate show mead. A juicy, unique taste of the French countryside for lovers of honey and connaisseurs of its fermentation.
This cuvée is made from organic sunflower honey harvested in the Gers region of south west France. The proximity of sunflowers fields to those containing buckwheat (another plant beloved by bees) add a slightly heavier honey flavor than some other floral honeys. It has soft notes of both of these plants, balanced by a refreshing acidity and bubbles, retaining the character of the honey without an overpowering sweetness.Batch 44-23 : 12% alc. - residual sugars at bottling: approx. 25g/L - sec
Mead categories differ from those of wine, usually containing slightly more sugar. At 25g/L and under, a mead is considered dry. The style allows for a better expression of the notes within a honey, showing off botanical notes of its surrounding flora, while retaining characteristics of the honey itself. Our dry meads are balanced with a natural acidity provided by bacteria indigenous to the beehive.
